Avocado is a creamy dreamy snack when eaten plain or a gorgeous smooth base for salsas, dips and even desserts. Also called the “alligator pear”, because of its rough, bumpy, greenish black exterior, that has not stop people from cultivating it for thousands of years as a highly prized food. Most avocados find their way to your counter top by way of California and Mexico, but they are enjoyed throughout tropical regions like Thailand and Sri Lanka.
Since avocado gets it’s rich texture and fat content from the “good” kinds of fats that won’t raise cholesterol, mono and polyunsaturated respectively. I use avocado in recipes in place of butter to cut the “bad” kind of fat, and because of its butter-like texture it makes the ideal, creamy base for chocolate cookies, fudge and thick frosty milkshakes. Even people who aren’t die-hard avocado fans won’t notice because it's a mild tasting fruit that easily adopts the flavor of chocolate.
