Cookin' Up Cauliflower

Mash it, blend it, puree it and you’ve got a creamy side dish that is literally bursting with vitamin C. Just one cup at 28 calories can provide you with almost all the vitamin C you need each day. Cauliflower also contains compounds that can slow carcinogens responsible for cancer. It comes in other vibrant colors, including lime green like the Romenesco cauliflower pictured here that looks like something out of Star Trek episode! Check your local farmers market for the lovely purple hued cauliflower that has the same shaped florets as the white variety.

Quick and Delicious Ways to Cook Cauliflower

My husbands favorite way to have cauliflower is simply steamed, topped with a pat of butter and toasted breadcrumbs. I love to add olive capers, and parsley along with fresh lemon juice to add Mediterranean flare to the dinner table.

When toddlers and even preteens go through that weird “all white” food phase, white cauliflower could be your secret weapon. Mash it, blend it, puree it up - you’ve got a white food that can provide vitamin C that you usually find in orange or green foods. Try adding a scoop of cooked pureed cauliflower in any kid recipe that uses cheese, from mac and cheese to pizza and even grilled cheese. For the grown up palate, I prefer it lightly steamed, sprinkled with your favorite flavoring, from spices like nutmeg and ground hot chilies, to reduced fat cheeses and even jarred tomato salsas.
