Bugs Bunny isn’t the only one who loves carrots—my doggie and kitchen side-kick Chester can attest to that. And he’s a pretty smart guy when he picks this sweet tuber as an afternoon snack. Skip the vitamin A supplements because just one large carrot has around 600 percent of your daily needs.

Quick and Delicious Ways to Cook Carrot:

Add one large peeled and grated carrot to stretch and boost nutrition in your favorite jarred marinara sauce. Thinly slice carrots and toss in freshly grated ginger, the juice of one lemon and finely chopped dried mango. Peel and thinly slice carrots and toss with chunks of sweet potato. Toss with fresh orange juice a little olive oil and salt. Bake at 350°F for about 45 minutes until tender.

    I've heard that carrots have significantly different nutritional content depending on whether they are cooked or raw. Do you have any details on that?

    OMG! I almost can't get past Chester's cuteness!

    As for carrots, just this morning I saw a woman on the subway switching between gnawing on a whole raw carrot and shoving carrot cake into her mouth. For some reason, it looked so strange to me that she was eating that carrot (instead of mini carrots that might seem more ladylike. ha!). But I think I might start doing that for breakfast! :oD

    Hey Phil!

    Raw and cooked carrots have the same nutritional profile as long as you don't over cook them, just steam in one inch of water for about 4 to 5 minutes
