Sweet Potato Fries

Healthier than their white sisters, sweet potatoes are very high in beta carotene. This is one of my favorite recipes because it's sweet and spicy at the same time and so easy and quick to prepare.

Sweet Potatoes or Yam (as many as needed) cut into long chunks (fry-like) • Olive Oil • Salt (preferably sea salt) to taste • Paprika to taste • Cayenne Pepper (optional)

Preheat Oven to 400 degrees In a large bowl, add potatoes and toss with all remaining ingredients. Use enough salt and paprika to coat each "fry". If you like spicy food, add a pinch or two of cayenne pepper.

Arrange potatoes on a cookie sheet (or sheets) so that they form a single layer. The less the potatoes touch, the crispier they will be. Bake for about 30 minutes, turning the potatoes over after about 15 minutes. Potatoes are done when soft inside and slightly crispy outside.
