Farmer's Market Dinner

A summer past time of mine is to browse the local farmers’ markets. Call me crazy, but I’d rather do that than go shopping. I get inspired to cook when I see what’s fresh and available to put together for a meal that evening. Here’s a simple dish I made up last nite after shopping at my local farmer’s market on 57th & 9th Ave. NYC. They are there all day Wednesdays and Saturdays from June-Nov. 9-5 pm. so if you’re local and in the hood, check them out. Beans were the only thing that didn’t come from the farmer’s market. I soaked those the night before and cooked them up while preparing the veggies. Here’s the menu:

Pinto/black/lentil beans w/carrots, celery, red onion, cilantro Beets w/fresh basil, olive oil, balsamic vinegar Steamed corn on the cob Boiled potatoes or new red potatoes w/olive oil, sea salt, black pepper Mixed green salad w/tomatoes, cukes, blueberries, red onion (sea salt, lemon, olive oil, black pepper dressing)
