“Tannins are astringent, bitter plant polyphenols that either bind and precipitate or shrink proteins and various other organic compounds including amino acids and alkaloids.” In casual consumer terms, tannins are what gives wines a rough mouth feel.

Wines with ‘Soft Tannins:’ Merlot or Pino Nior

Wines with ‘Strong Tannins:’ Cabernet Sauvignon, Syrah or Shiraz

Stronger tannins are found in red wines since both the color and tannins are due to exposure to the grape skin. In addition to creating a wine’s overall taste, tannins are also responsible for the cholesterol lowering and cancer fighter properties found in red wine.

    After many trips to the "Umbria" region of Italy, I have become to appreciate what goes into Wine And Olive Oil production. It is amazing what goes into it!
